I was just accepted for my first stage and am looking into starting a knife set. I'm buying good knives, but I wanted to know what types are the essentials for someone working in a professional kitchen? I know a chef's is a given, but I'm a little confused as to what else. On the same note, I know a sharpie and Moleskine are needs, but what are the other tools that I'll most likely need? Thanks in advance.
