sponge cake emulsifiers

    Does anyone know where I can purchase sponge cake emulsifiers in the U.S.? I've searched the web but the only hits I get so far are from Asia (China) and the middle East, and only sold in large quantities. I'm looking for a small amount (no more than 5 or 10 lbs.).

    I'm trying to find a way to enhance the texture and appearance of my "jelly roll" desserts. They are actually called "Pionono", a dessert made in the Philippines. Any helpful suggestions are greatly appreciated.

    try Paris Gourmet, Albert Uster Imports, Swiss Chalet or Chef Rubber.

    Why do you need the emulsifiers? extra yolk could be a simple solution for small batch.
