Soy Chicken Process

    Today I prepped a chicken to go in the oven tomorrow. After step 3 place in the fridge overnight to dry or leave on counter with a fan blowing on the chicken. Roast as you would normally, either split in half or whole.

    Interesting Kuan - I imagine one could ladle seasoned hot water over the bird ala Peking Duck as a substitute for #2.
