South American Cuisine...

I am in need of recipes that originate or embody any South American Cuisine.
Specifically, I need a diversity of meat, vegetarian, and vegan dishes. If anyone has any suggestions or resources, I will greatly appreciate it.

The first thing that comes to mind for me is Argentina and its grilled beef with chimichurri sauce.  Also ceviches from those countries with ocean coasts.  And as I recall, various types of sweet potato are fairly common throughout South America.

To me, it is the Brazilian feijoada! It's wonderful! Quite a few ingredients but once you gather them, the dish is easy and quick to make.
