some help with a project for school

    I need some help with a school project. I need to write a 3 page paper on a classical pastry and I choose "baravois" or Bavarian Cream. I am having a hard time finding any information on the history other than a few three line paragraphs. can anyone help with a site that may help me with finding information?

    Several universities have great cookbook collections and might be willing to look it up for you. Kansas State in Manhattan has about 125K volumes dating back to the 15th century. I think New York University has one as well. Of course CIA and J & W have good cookbook libraries.  And of course you've already checked LaRousse and Escoffier.
