So what did the rich people eat?

    I do a lot of reading, and the thing we're all familiar with is how all the great dishes and classics we've come to know and love is born out of what the poor people had to make do with. It's out go to comfort food.

    So what were the rich people of yore eating? Sure, I get that it's the tender expensive pieces of meat, but was it prepared differently? Did they have recipes for this stuff? I'm sure they must.

    They watch their weight and always expect smaller portions yet with a larger assortment of dishes.  Where I work they eat a huge breakfast, always fruit plates and then some type of protein. 

    Lunch is always the big meal of the day. Late afternoon they always hit the kitchen up for snacks of some sort. 

    Supper is always light, served with wine and dessert is a given.

    My boss is sweet on chocolate so I'm always baking with it. 

    His wife accumulated recipes from their travels with the view of making a cookbook. 

    They expect the food cooked well and properly seasoned ,whatever is being served. 

    Bringing back food from their youth and their obvious favorites is always something good to do, ie: apple pie, baked scones, breads,  pastries and the like are  all a plus.

    They never , ever eat in fast food establishments. They run on a schedule and the choice of restaurant is always booked ahead of time.

    The rich like the foods with advance technique, The more advance the dish is the more upscale it can be such as sous vide of tenderloin...Were as ye ol' grandma has great savory dishes, but very low in techniques such as through everything in the pot and let that braise all day to bring the flavor.

    Very true , especially for the Nouveau Riche.

    The topic of food at some point will enter into their discussions while eating.

    I worked for a wealthy couple for years. They were always open for experimental dishes. They also liked rabbit, duck, squab, stone crabs. escargots, lobster main only . Loved their Vodka and upscale wines  reds only. Not into health foods or diet so much even though he should have been (diebetic). Both past away but were extremely nice Palm Beach Island people

    Spent years as an exc in private clubs, and while they loved the classics it was always well recieved to do new and different things. We would do wine dinners once a month when we would select 5 to 7 wines and then pair a7 to 10 course dinner with it. Limit to 30 guests. There was alwsys a waiting list.

    On the flip side several years ago i got an unexpected drop in table from the King of Sweden(and yes I told the server I was bust and didnt have time for jokes) he had a simple starter of assorted sill and when he found out I was American decided to have the baby back ribs. Very nice fellow. Im sure he didnt eat ribs yesterday at the nobel dinner, but ill ask about the menu as a friend of mine and her husband went to attend.

    Does it ever bother you that if you think about it, most of the food that is prepared by the staff is food they will never be able to afford or enjoy?  I think that is one the great injustices of the world.  Great food should be for everyone.

    A hungry cook is s stupid cook.

    Great food for everyone in my kitchen. One of the great benefits of being in the kitchen is to have access to food you may otherwise never see or eat.

    Make the negative positive. Option to get out the kitchen and go wipe buts with the greedy servers ( servers are half studying to be in Med, ie nursing etc (( not that there is anythibg wring with that!)))and eat steak at the end of day with poophands. Justice is served.

    The OP asked about what the wealthy ate years ago people, not now.

    If you research the menus of the Edwardian era, you'll find that the wealthy ate diets filled with meats, cheeses, lots of starches, and vegetables. Things like peacock, wildebeest, lion, aardvark, were not uncommon.

    I did a titanic menu once that was fun, told a banquet captain that they didnt have cells back then hah.

    They actually had 3 or 4 tiers of menu for the po people.

    We had a mis mash bastardized titanic buffet menu for a dinner theatre. I cant even remember what it was, unremarkable I guess but it was a few years ago.

    Id say that in general throughout history rich people ate more.

    Rich ancient Romans at a lot of Lead ( because of their utensils etc were leaden. They were crazy haha.
