Heyas, just joined. I'm a first year culinary student, but I've been working in the industry for nearly ten years -- I'm looking forward to having the credentials to back up my experience, as well as the technical knowledge, and plan to open a restaurant.. eventually.

I guess that's about it.. looking forward to exchanging some ideas and general pointless banter with y'all. Cheers. :D

Thanks. I hope so too, as far as the schooling aspect. I've been working in kitchens long enough to know it's where I belong, but school and I didn't really get along when I was younger.. /img/vbsmilies/smilies/lol.gif
I suppose things are different now that I'm older, paying for school, and it's something that actually interests me rather than the same monotonous crap I seemed to get taught every year since eighth grade.
