I've been reading about freehand sharpening for about two weeks now and everything is kind of jumbled at this point(I know it's not rocket science but still, there's a lot of info). So I need some clarification(and just to clarify I am sharpening a Masamoto Gyutou 24cm on Naniwa SS stones, I have 400, 1000 and 5000 grit). What is the basic procedure and motion? How do I set up my stones? How long do I soak them? Asymmetry: The knife, apparently, is ground 70/30 righty. Should I try to change this or leave this be for now? Some basic do's and don't is really all I'm looking for. Thanks dudes.
