    with my cheap dollar store knife after months of practice, Now I can mess with my good knives:)

    Good knives are the basis, I can not imagine working at a catering point, where basic work tools are of poor quality. It's dangerous.

    Congrats! Sharpening is the most important thing to learn. What's the point of an expensive knife if you can't keep the edge?
