what is the best material to put on top of my electric stove (typical home coil element) and the pot so that the material keeps the temperature steady while the electric stove cyles on and off and on and off?

I know that heat diffusers will spread out the heat evenly across the bottom of the pot for the purpose of avoiding hot spots...but that's not my problem.

I need some sort of material that is resistant to temperature change so that when the electric coil is in the off portion of the on/off cycle the material will hold on to the heat which smooths out the small temperature changes that occur in the substance being cooked.

Someone suggested a heat diffuser but every diffuser I've found talks about spreading the heat to prevent hot spots but none talk about my cycling problem.

    kind thanks,

    Eddie
