Simple wine/cream sauces

    Hi,

    I'm trying to expand my knowledge of simple wine/cream sauces, i've got the following pretty much nailed:

    2 tbsp sundried tomato paste

    250ml white wine

    250ml fish stock

    150ml double cream

    I usually serve this with white fish fillets.

    1 tbsp english mustard

    1 tbsp green peppercorns

    250ml red wine

    250ml beef stock

    150ml double cream

    I serve this on a nice steak.

    Any other suggestions for simple reduction sauces like this, ideally looking for something for chicken and/or pork.
