Side dishes ??

    I am fortunate enough to be able to create the nightly special three nights a week where I work in an upscale steak house, my problem is coming up with side dishes particularly starches, any ideas other then your basic rice, barley, risotto, orzo, polenta, I did a roasted garlic and bacon grits last night they were good but I don't think I will do grits again ! lol, I have worked on and off in restaurant's for  years and have recently started culinary school, so any ideas would be greatly appreciated, I really struggle with what potato dishes go well with fish, tonight im preparing sockeye salmon,

    Hasselback potatoes

    Bleu cheese and crispy bacon mac and cheese (maybe with corkscrew pasta)

    O'Brien potato cakes made with mashed pots but with peppers and caramelized onions for O'Brien flavor

    Gnocchi with a sauce that compliments the protein

    Chipotle Butternut Squash (or maybe as a ravioli filling)

    I would probably do a potato gritan. 

    That or a squash or sweet potatoe puree with a side of sauteed veggies and sweet or savory demi on top of the protien.

    Maybe some tortellini

    Fried Bananas (plantains) here in Brazil also go great with meat

    I'd plate the salmon horizontally on a rectangular plate.  Along with the salmon in the middle of the plate would be a scoop of couscous tabbouleh.  On one side I'd have a combo of grilled asparagus and grilled scallions.  On the other side would be a sliced roasted pear half in a stilton cream sauce.  I'd also suggest an earthy Pinot Noir as beverage of choice.
