Should rice in paella be al dente, normal or well done?
Al dente, with socarrat.
Mine came out chalky, is that too al dente?
Did it taste good? I can't imagine "chalky" tasting good, so I would say that was probably undercooked.
Came out fine, I let it rest for 20 minutes or so, it was probably still soaking liquid.
Oh so it was chalky before the resting time but not after? Good. Sounds like the carryover cooking took care of finishing your rice.
