We have operated a Mexican restaurant for 20 years and we have always used the Roundup Steamers for melting cheese. Makes a wet mess on the plate. We started using a cheese melter but with it being so close to the hot line it puts out too much heat to use it the 90% of the time that it's needed. I don't have any experience with salamanders so I was wondering if they put out as much heat (out of the front into the kitchen) as the cheese melters do. Thanks in advance for any help or advice.
