salad dressing recipes

    Does anyone have a few good salad dressing recipes to share? The girls at the sorority love vinagrettes and I am especially interested in citrus recipes. The ones I find on recipe sites just seem to lack the wow that a good dressing delivers.

    My stock dressing is

    grapeseed oil
    rice vinegar
    soya sauce
    mirin

    to that you could add citrus zest or juice , ginger , chilli .

    AVOCADO VINAIGRETTE

    2 shallots, minced
    2 tablespoons lemon juice
    6 tablespoons avocado oil
    Salt and pepper to taste

    If you like a little extra flavor in your dressing, try this -

    Take a bottle of plain vinegar and put in some garlic cloves and jalapeno peppers, then let sit for at least a week. Substitute this vinegar in a basic vinaigrette or creamy italian style dressing for a lot of extra flavor.

    Honey, lime, cilantro, oil.

    To go with what Pinot said, try Ponzu instead of soy sauce.

    This one is really simple, but has zing and is very tasty!

    2 TBSP EVOO
    2 TBSP Balsamic Vinegar
    1 Heaping TBSP Dijon Mustard
    1 Heaping TBSP Brown Suger
    Dash of salt to taste
    1/4 tsp fresh ground pepper
    2 shallots finely diced (or red onion)

    Whip and serve on Romaine garnished with some feta cheese.

    orange juice concentrate, tarragon, white wine viniager,minced shallots, dab of dijon mustard, salt/pepper and light olive oil.....

    Citrus dressing:Fresh oranges, juice and zest, lemon juice, lime juice, honey, salt, white pepper, shallots, Dijon mustard, light olive oil

    Cranberry dressing: Dried cranberries, shallots, Champagne vinegar, mustard, S&P, light olive oil or veg oil. Nice with spinach salad.

    Jalapeno dressing: 5 roasted jalapenos, 3 roasted garlic cloves, buzz with 330 ml yogurt, fold in 660 ml mayo, cilantro, juice of 1 lemon and 1 lime.

    Anneke, that sounds yummy. I was going to make crab cakes sometime in the next week and was pondering what sauce to serve them with. I might try this.

    Roasted Shallot Dressing:
    8 shallots, peeled, & roasted until caramelized
    1/3 cup Champagne Vinegar
    1 - 1 1/3 cup Canola Oil
    Salt
    Pepper
    Puree half the shallots with the vinegar. Mince the rest. Combine all ingredients and season to taste. This is also good with a little dijon to emulsify it also.

    Honey Cumin Vinaigrette:
    Honey
    Ground Cumin
    Lime Juice
    White Wine Vinegar
    Canola Oil
    Salt
    Pepper
    Toast the cumin in a dry saute pan until fragrant. Meanwhile combine 1 part lime juice to 2 parts vinegar. Add cumin and some honey along with some salt and pepper. Allow flavors to marry for a couple of minutes before adding the oil. Adjust seasoning and sweetness.

    Jalapeno Ranch Dressing:
    Jalapenos
    Fresh Garlic
    Cilantro
    Dried Oregano
    Shallot
    Lime Juice
    Splash vinegar (if neccessary)
    Buttermilk
    Mayo
    Sour Cream
    Pinch sugar
    Salt
    Pepper
    Combine all solid ingredients with buttermilk and puree until smooth. Mix in mayo, sour cream, lime juice, and vinegar to consistency and season with salt and pepper. Balance with just a pinch of sugar if neccessary.
