Russian Beef Dishes

     I am in need of a good, authentic Russian Beef dish. The challenge is I need the ingredients to be mainly comprised of ones I can find locally to my region, which is Northern Idaho. The dish will have to go well with borscth, potato cakes and cabbage shchi. The first uses curry powder and bell peppers, so not very authentic or traditional. 

    Does anyone have any resources I could use or recipes?

    I've got this cookbook called "Please to the Table" that features Russian and eastern European fare.  I'll browse through it later this evening, see if I can find any useful info for you.

    Do a web search for 'hussar's roast' recipes, it is basically a pot roast,  the beef stuffed with a horseradish filling.  I've nevr made it, but it does sound tasty.  Also khalia, a spicy beef stew from the Georgia region sounds good, there's a few recipes on the web for that.

    There actually is a web site called russianfoods.com - you may want to browse through the recipes they have.  I'm sure there is at least one beef stroganoff recipe, no doubt.

    Given that my family heritage is half Prussian and half Lithuanian you'd think I might be more familair with some of the cuisine from that area and western Russia.  I might have to try the khalia next time I'm in the mood for beef stew.

    teamfat, thanks for the advice. I am going to look into the 'hussar's roast'. The original hope, was for a stuffed meat of sorts. And pork, we cannot find locally.

    oh man borsht is my favorite. i am from uzbekistan and have alot of russian influence. the pankakes you are talking about are actually blinis stuffed with different things, or in your case meat with some onions maybe, you can try also to make pilmeni which is like tortelini but insted its stuffed with ground meat with onions seasoning and cooked in a rich broth and served with or they can be fried and are my favorite. try using a pasta dough for taht and it will be good all flor no semolina. most of russian food is pretty similar to german or poland so you can cross reference them. globkio which is called different in russia is ground beef with rice and rolled into cabbage cooked in a soup. i usually brown some meat then add onions and carrots and once its sweated add onions and i like to add peppers. then fill it up wit stock and add the stuffed cabbages. pirogis are good which is meat or others things stuffed into dough than fried Most of the foods is sauseges, cold harvest vegi cabbage, potatoes... and sourkrout. ill try to think of some things but search around you will find things
