royal icing... any ideas?

hey all!!!

at the restaurant, the chef would like to start making our flowers out of royal icing however i havent come across a recipe that doesnt use egg whites.

any suggestions?

If, however, you're looking for one that doesn't use eggs at all, let me know if you find it. So far, the vegetarian equivalent of royal icing has completely eluded me. Nothing without egg will set like that.

Although marzipan/almond paste would work, for flowers.

Why do you want to find a recipe which doesn't use eggwhites? Royal Icing, by definition, uses eggwhites. Add enough sugar to anything and it'll be shelf stable till the next ice age, you know, like twinkies? :)

There's also royal icing mix, which is essentially powdered egg white mixed with 10x sugar. Just add water.
