Rough Danish Pastry Dough / Quick Danish Pastry Dough

Hello Chefs,

Happy Easter to all who celebrate this festival!

I have heard from friends from Denmark that these days, the Pastry Chefs use a rough method to create danish pastries.  May I know if its true as I asked my Mentor and he said they still use the old fashion method.

Could anyone enlighten me on this?
