Room to grow

    I'm currently employed at a country club with no professional training, but have learned a lot in the past two years I have been there. I aspire to be the absolute best that I can be and am looking for that extra push. More and more it seems the workplace is catering to peoples feelings which in my opinion takes away from the main goal of getting a job done. How do I find a chef with the willingness to teach with extremely high expectations and putting accountability on the forefront? One that is willing to make you throw your dish in the trash, make you do it again then scream in your face for it being late? It may be a ridiculous request but I wonder if those kitchens still exist. And if so, how do i get in with limited experience?

    I ask then...."What is the job?"....If not to cater to peoples needs and wants.....

    Country clubs are JUST that. The members pay extreme amounts of money just to say they "belong" to the club and then expect to be waited on hand and foot.

    You would be hard pressed to find such a Chef in a place like that, but they are around.

    Do some homework about places in your area. Call around or go visit.

    If you are looking for a kitchen that has any degree of accountability it will first start with the menu. You'll be able to tell the difference upon seeing it.
