Request for advice

Dear Chef-talk 

I am currently applying for an apprenticeship in japan therefore i need to buy a book that can explain from basic to advanced or Professional Level. 

i need advices or suggestions for choosing the best Professional Japanese cooking book and if possible it is all-rounded and includes almost everything in japanese cuisine. your suggestions and considered are appreciated and many thanks for them.  /img/vbsmilies/smilies/smile.gif
