Reheating Queso/Marinara

    I just started cooking at a restaurant and am curious about reheating procedures. The place makes it's own queso and marinara sauce and stores them in third pans. Sometimes they reheat the product in the heating well (i think this is a no no..right?) and sometimes they reheat the product by placing the third pan in a fry basket and reheating it in the fryer..(is this ok?). What's the most correct way to reheat these sauces without making people sick?

    Heat in a sauce pan. Transfer to a clean third pan. Put in heating well.

    Doing it in the fryer sounds like a major accident waiting to happen!!!

    lol, what? How hard is it to grab a pot and heat it up on the stove? Why on Earth would someone do that?!?
