    *waves*  I'm in the final stretch of my Pastry Chef apprenticeship and need to brush up in order to write my Red Seal exam back in Ontario.  I can't believe that there are really no online resources to aid me in this.  I am not looking for a copy of the exam, only an outline of how it's set up so it will help me study.  If there is an area that I need to specifically focus in, that would be helpful as well.

    I have no intention of having to travel 7000 km round trip and not passing.  /img/vbsmilies/smilies/crazy.gif   Any advice would be very much appreciated.

    Check out the ITA site, they should have some information on it, or links to the appropriate Ont. branch that does the foodservice tests.
