Recipes to remember?

    I don't know about you, but I find that more often than not I'm pretty reliant on having a hard copy of a recipe in front of me (with exceptions for things I do frequently of course). Luckily, this is real life and not Top Chef or something, so that's no problem!

    I'm curious though, what are your go-to recipes that you have memorized, and what are some things you think that EVERY chef should be able to make without having to pull out a reference?

    I end up remembering my recipes on accident really, from doing them over and over. Its typically something my restaurant preps all the time, or one of my specials. 

    I don't think it makes you a bad chef if you cannot remember recipes. I think depending on what kind of chef it depends on what you should know. If you do a lot of say, bread baking, I'd expect you to remember bread recipes. If you work with a lot of soups, same goes for that.

    I HAVE to have a recipe for everything I do at work, because that is company policy. No biggie though.
