Recipes for Ailing Cancer patient.

    Hey all, I am looking for easy to make recipes with, little or no spices, using chicken or turkey. Also, these foods HAVE TO be liquified in order to be digestible.

    My mother is on her last days, after battling Stage -4 breast Cancer, and she refuses to give up. She has been fighting for now going on 4- years.

    I made a simple chicken soup recipe with Mexican Fideo pasta. Although she can't eat the carrots, I cut them large enough to cook and later separate from the soup.

    Just asking for more ideas if there are any out there! I'm not a scholasticly trained chef, but I can cook thanks to my mom's instruction since I was very young (I'm now 42)

    Sorry to hear you're going through this.  I do hope you can provide some tasty satisfying meals to her while she battles this terrible disease.  

    Must the dishes only include chicken or turkey?  Essentially you're making just soups now so the possibilities are endless.  It is tomato season, roast up some nice tomatoes with garlic and onions and pulverize with a stick blender and add chicken stock.  Delicious.  You can also puree lentil soups, potato soups, mushroom soups, anything really.  Get yourself a good stick blender and have at it!

    Thanks for the info, as of right now I think she can eat the other soups. She is lactose intolerant too. She loves lentils! I will they the tomatoe soup you suggested.

    First off, I am so sorry that you and your mother have to go through this and i applaud you for being her caregiver. It is not an easy task.The first food that comes to mind is miso paste. if you are not familiar with miso it is fermented soy,rice or barley, or all three. It is packed full of things good for you. However it can be salty depending on what it's made with so you might want to first try the white or yellow miso first as they are milder, if salt is an issue. There are also low sodium miso pastes. easy peasy to prepare as you dilute it with water and heat. You can add ground ginger which is also great to relieve and help stomach ailments. For other soups, as kk suggests you can purée just about anything.....carrots,, beets, butternut squash all made with chicken or vegetable stock, red lentils(dahl)are smaller and practically take no time at all to cook. Split pea soup is another great as well as avacado-cucumber on a hot day..the list goes on. Besides soups, there are many good protein and super juice drinks on the market....one of my favorites is acai berry. Another is the green machine. Both are full of antioxidants. Grocery stores now carry both 'odwalla' and 'naked' juices.Check out your local health food store for raw meal organic meal replacements.....you can mix it with rice or almond milk. You can also use soy, almond or rice milk in your soups. though not a soup, a cup of steel cut oats for breakfast will go a long way....with almond milk and brown sugar
    make stewed plums and pears and purée

    Durangojo... Thank You very much! Great ideas. My catalog of ideas is small, all your help is really providing more ideas i just didnt realize or think of.

    My mind is on taking care of my mom, which is very difficult in itself, not to mention dealing with her strong will and determination. I hope I meet death with the same vigor she has, it's incredible!

    DiabloDan, I’m sure that you’ve already formed a good support group around you, and I’m so glad that you’ve joined us here at Chef Talk for another avenue of strength through food.

    I’m wondering if your Mother has any other food intolerances.  My G-Ma couldn’t handle anything spicy or pungent as she soldiered on through her battle with the big C.  We had to strain all of her ‘foods’ so that there were no solids.

    Sometimes the medications and treatments effect the senses. (taste & smell)  Taste and smell changes  there are also recipes to try Recipes to try

    Adding "a touch" of  different spices can conjur up good memories for her, such as cinnamon and vanilla.

    Tomato soups with basil

    Make a potage (potato soup)  potassium is good, with alot of  vegetables and stock. I don't know if you own a stick blender/magic wand ? But all you need to do in stick it in the pot and blitz it. If it is too thick , add stock or water to thin it.

    Beet soup is good, carrot soup with a pinch of nutmeg . Squash season is starting , they make for a nice soup as well. A good beef broth to sip on (made with beef and vegetables)

    Instead of removing the carrot , you could always mash/puree it and put it back in the soup.

    You can also make protein drinks for her.

    As for dietary restrictions, she just can't digest or has major stomach problems with the following;

    no beef or pork, can't handle carrots at all but juice from is ok, no melons of any kind, kiwi. Cabbage (cooked or otherwise )but foods cooked with is ok (but not ingested).

    My mom loved all foods, but recent events have caused her to leave those foods.

    I made avgolemona soup one night and one of my favorite customers liked it so much that I sent some home with him. He had lung cancer and had not been eating much of anything but ate his entire bowl of soup. It is a Greek chicken based soup that can be served with or without the chicken, I poach chicken breasts in chicken stock with rough cut celery carrots and onion that is removed once the chicken is cooked. I also add garlic and rosemary to this which is also strained out. Once the stock is strained you can add orzo (rice shaped pasta) or rice.  Cook whichever you choose in the broth until done,  For 1 quart of  broth beat together 3 eggs and 1/8 cup lemon juice. Use a metal or glass bowl for this. Beat in about 1/2 cup hot stock with the egg mixture.. Repeat about three more times or until egg mixture is warm. Then you can add the egg mixture to the rest of the soup. This makes a cream type soup without the dairy. The more eggs you add, the thicker it is. You can add the chicken back in or not and I imagine it could be made with lentils intead of the rice or orzo. Sorry to hear about your mother.

    Hi Dan,

    It sounds like you are doing a great job looking after your mum. I am sorry you are both going through this, and like the others have said being a caregiving is very very tough. Your mum sounds like an amazing lady.

    You said your mum likes lentils. How about lentil and potato soup if you blend it all together so there is nothing large in it?

    Makes enough for 4 so you'd need to half the recipe for 2 of you.

    300g lentils

    1 clove garlic

    drizzle of olive oil

    2 small potatoes, peeled and cubed

    1 carrot, chopped

    1 stick celery, chopped

    1 onion, chopped

    1 bay leaf

    1 pinch salt

    1L vegetable stock

     

     Soak lentils in cold water with garlic overnight.

    In a large pot, heat oil over medium heat, add the garlic that soaked in water with lentils. Add the vegetables, drained lentils, bay leaf and cumin. Season with salt and stir.

    Add the stock. Cover and simmer for 1 1/2 hours, stirring occasionally.

    Blend and serve.

    Hey Greyeaglem, made your recipe for dinner... Mom loved it and was surprised what it was. She enjoyed it and asked for seconds. LoL! She hasn't done that at all since leaving the hospital.

    So sorry to hear about your mother, I went through a similar situation a few years back so I definitely relate.  The trick is to pack as much nutrition in a given meal as possible and have the balance of flavor, seasoning, and ingredients.  I am going to through a totally different idea out there.  We have a gentleman at our church going through the same deal as well, he is currently in hospice.  He has been doing fresh juice everyday and has seen a drastic improvement overall.  He loves the juice and it is packed with an incredible amount of nutrition.  There is a really great resource for some great juice recipes if you search, Rawfully Organic or Fully Raw Kristina.

    I am sorry to hear about your mother's health battle. My stepmother too couldn't eat much of anything but liquids before she passed of cancer but I recall her liking almond milk soups. Like a mild white gazpacho, she liked it a lot. It was smooth easy to go down. Don't remember the exact recipe but there are tons of white gazpacho's to google.

    I've been involved recently caring for people in very similar situations in a nursing home, where many are undergoing palliative care.  She is lucky to have you caring for her to make her time remaining as interesting as  possible foodwise - it really does become a challenge to keep what she can eat interesting.  Really good advice from all here, and I know our hearts are with you in this.

    As time progresses the meals will become thinner, more finely strained, and the challenge is to keep it nutrituous.  Not an easy task.  I've noticed that peach and pear purees were popular, as well as what looked like a chocolate mousse where the bowls came back usually scraped clean.

    Don't forget to look after yourself, physically and emotionally.  That way you can keep being the great support to her that you already are.

    Dear Linecook854 and DC Sunshine, many "Thank You's" to both of you and everyone else who has responded... All your ideas have made things much better. Cooking for me has been a bit of a stress reliever for me. Since I have to stay close, golfing is out of the question, and fishing is too ( my other two hobbies)

    For myself, reading is becoming more of a new hobby. Day time T.V. Has become very boring. You can watch only so much of Maury Povich's " you ARE the father"! Between YouTube, Food Network, and Cooking Channel, I have been learning more and the various cooking techniques.

    Next week I return to work.its going to be tough, but I am leaving mom with plenty of portioned meals and froze the rest so leave a good supply. My family will stop by and check in with her everyday so she should be ok for the time.

    Just an update, mom is doing well considering. She has gained alot of strength and is much more active.

    THANK YOU to all of you. Your encouragement and ideas have made her happy and stronger. I am doing better as well, both mentally and physically.
