What do you really think about those Confessional bits in Primal Grill?

They seem like an effort to pull in Reality TV format while providing cut space for the show to add commercials if it gets picked up in syndication.

Phatch, am not quite sure what you mean by "confessional bits" in Primal Grill. You mean the outtakes? Where (mostly) you see me screw up my lines? In including them, there was absolutely no intention to provide cut space. That's a new term to me, in fact. I don't even think syndication is an option on PBS.

No, they're just there for fun. We're real people--working, sometimes, 18 hour days, flubbing lines, dropping plates, laughing at inappropriate times, swatting the huge bugs that come out at night in the Arizona desert, waiting for golfers to finish their tee-offs... In that sense, I guess you could call it "reality". The main thing is we want the audience to see that a lot of people contribute to the success of the show.

No I mean the fireside chats where you wax on about a dish or technique.

Oh... Well, that was my producer's idea, a way to give more background on a dish in a relaxed atmosphere. The set is anything but relaxed, and sometimes I don't have the time or concentration to tell people why I chose to include a dish in the show's menu. We get a lot of positive feedback on the fireside interviews.
