Ravioli dishes

    Id like to start trying to do up some ravioli dishes and from the cook books i have and from browsing on the internet ive no idea what sauces would go with what fillings. If anyone has any idea what goes with what could you let me know.

    @Foodie 13  what kind of fillings are thinking of doing?  Are you going to be making ravs from scratch?  Could you tell us a little more?

    This month's challenge is mushrooms, so how about mushroom ravs with a nutmeg cream sauce?

    kan im making the ravioli from scratch. im dying to try out the butter and sage sauce but no idea what fillings would go with it. a filling i was also going ot try was pesto, pecerino cheese and basil but no idea what sauce goes with it.

    @Foodie 13  , k~girl here (so much easier to type don't you think?)

    I'm a huge fan of a simple olive oil, white wine, garlic and grated parm on any type of rav. DH likes a tomato sauce.  These two plates are served with sausages.

    At my table it's straight up ricotta cheese, parm, eggs, loads of flat leaf parsley, S&P and a pinch of freshly grated nutmeg for the filling.  I usually make a really big batch and then freeze them for multiple meals, mainly because they are not the easiest thing to make.

    Butter an sage hmmm , i think it would go fine with a pumpkin or squash filled ravioli. 

    I also fine ricotta goes great , with sage and butter .

    Can you share your ravioli recipe?

    Pumpkin or butternut squash ravioli with brown butter sage sauce.  Top it off with crushed amaretti cookies. So many options.  Let your imagination be your guide.

    The ravioli is made up of fresh pasta which is very simple. 100g of 00' flour (it's a flour for making pizza dough or pasta with) and 1 egg. This is the measurements for 1 person so for 3 people it would be for example 300g flour and 3 eggs. also add a pinch of salt also add a splash of oil. mix all together and knead for 10 min. flatten it out as thin as you can with a pasta maker or a rolling pin. cut in half. on the bottom layer put in your filling and put some egg mix around the edges so the top part of the pasta will stick to the bottom when you join them together. make sure there is no air when you put the two pasta layers together. and cut then between each filling.

    you should check out the chiappa's.com they are welsh cooks and are half itlalian. they do a very good reciepe for ravioli.
