Rabbit

    Until last weekend I had never cooked rabbit. I think it is because I had a pet rabbit as a kid, and the idea always made me feel a bit squeamish. However I decided to take the plunge and bought a whole rabbit at the butchers. It was skinned but that was all, my husband butchered it, bless him.

    Oh, the smell! It was disgusting!

    I was worried that it had gone off but it was freshly bought and vac-packed, and the butcher had said it would be fine for a week, so I stuck it in a stew and it was delicious.

    Is raw rabbit supposed to stink?!

    Because it was vac packed it probably had to gas off after opening.  I have the same experience with other proteins.  Once out of the package they freshen up quickly.

    It tasted yummy, I'll certainly be doing more with it in future.

    Good to hear - rabbit and mushroom ragout is one of my favorites.

    Rabbit braised in Guinness Beer with a side of sour cream and carmelized onions.  MMMmmmmmmmmmmm  mmmmmmmmmm.  /img/vbsmilies/smilies/rollsmile.gif/img/vbsmilies/smilies/bounce.gif/img/vbsmilies/smilies/peace.gif

    Another recipe I do is cook some bacon in heavy pot then dredge my rabbit in well seasoned flour and brown in the drippins' - then remove from the pot.  Saute onions and then mushrooms.  When those are almost caramelized I add sour cream, the rabbit, cover and simmer till done.  This one requires some nutmeg and black pepper.  It's very good.

    Rabbits can have scent glands that smell absolutely terrible if you cut into them. Especially if it was a sexually active male. Your butcher may have busted one of the glands in cleaning. It doesn't always affect the taste, but can. 

    Rabbit can be pretty tough, so make sure you cook it down. A stew is a great place for a rabbit. Rabbit sauce piquant is a local favorite.

    Kokopuffs, Rabbit braised in Guinness sounds amazing.

    Mike I'm making that this weekend, my mouth is watering at the thought!

    Thanks for the info regarding the scent glands, i wonder if it was that. It was a really evil smell.

    When you say he butchered it... was it already gutted? If not rabbit guts STINK badly. Always wear gloves when handling raw rabbit, it can carry a parasite that humans can catch.
