quality short courses for professionals??

    Hi folks, does anyone know were one might find some short term (up to 6 weeks) education for a professional with some paid training time?  (time off paid, not course) I've got up to six weeks off April/May and can travel anywhere, I just need to know I"ll be in a course not geared to hobbyists and i'll learn something. 

    I am also looking at getting some formal pastry training next year at Ferrandi- does anyone have an opinion on this school?  I've only heard good things so far.
