pullman recipe

For Pullman bread, I simply use my white bread recipe.

I only make pullman for a local resturaunt who wants square bread for their texas toast.

I don't have the pullman pans that are connected but I do have 14 seperate ones. The lids are impossible to get on and off while hot so I place three baking pans on the top for half the bake ( approximately 15 mnutes ) then remove them after the top crust has formed.

While this may not be the "proper" pullman bread, it gives me what I need and as I'm brand new to baking, it'll do until I get more experienced.
