    Sounds like you have the right attitude and are giving yourself plenty of time to work stuff out. Nothing wrong with doing your due diligence...in fact, you should do no less.

    I think it's weird that you won't post your menu (would be easier to help you work the kinks out on that if you'd post it) because you don't want people to steal your ideas. I can tell you if you're doing a sandwich food truck you probably aren't coming up with anything new. But, maybe not posting it is a good idea because all you'd get in return is people on the forum telling you why you shouldn't do the things you want and offering what they think you should do.

    Anyways, keep us posted. Always interested to see how these things develop.
