Prepping potatoes the day before

    I need to make mash potatoes for an event. I was looking to slice 10 pounds of red potatoes the night before but I was wondering if they would go brown before I cook and mash them. Any suggestions?

    As you slice them, put them in enough acidulated water to completely cover them and they will be fine overnight.

    Just keep the potatoes in water and they'll be fine.
