A little more information would be helpful. But, I will make a few assumptions.
To answer your question, yes, they should be fine. Sometimes, when potatoes are cut and not rinsed prior to cooking, cooked and then stored in the fridge, they can turn color when they are exposed to air.....usually black or a dark purple color. They can even react to the iron content in your knife and turn color.
The best way to avoid this in the future is simply rinse the spuds after your cut them and before you cook them.
