Potato Garnish

    If anyone is looking for an idea to garnish your beautiful plates/platters , this takes minutes to make, costs barely nothing.

    It starts with the humble potato.

     You will need : one new potato, warm water bath, tablespoon of vinegar in water to keep potato slices white, and a mandoline. One large potato can make 6 flowers.

     Take one slice of potato, pat dry and gently turn the corner inwards, and simply roll it.

     It will look like this.

     Keep adding dry slices 

     Till you decide which size you like

     Take one or two toothpicks and push them through the bottom to hold them in place.

     As you can see from the picture, the slices are quite thin and that is the goal as they cook very quickly.

     Have a pot of clean oil , temp 325 , place your flowers in. It should take about 5-7 for them to turn golden brown. 

     Here is a view of them cooked.

     Slide toothpick out prior to plating. These look stunning surrounding a Roast turkey,chicken, pork,, beef , fish of all kinds, etc. The ideas are endless.

    Truth be told, my mother asked me if I could do it with a potato early this morning.

    I love how the edges get a little darker than the rest, it gives the finished "rose" a beautiful aspect, especially on that last photograph. Nice idea from your mother, and a challenge well executed. What's next.... a sushi "rose" made with thin slices of raw scallops, finished with a torch? Hmmm ... /img/vbsmilies/smilies/wink.gif

    Very nice, I do with a turnip. Rutabagga and beet but don't fry use for cold garnish.
