Please help identify this fish so I can cook it!

    HI, I went to a fish market this morning and bought this fish. Unfortunately I am not a fish expert and have fogotten what it is called and how to cook & clean it!!!

    Could you please help identify this? Thanks a lot!

    I can't tell what kind it is. Just treat it like any other fish. Filet it or cut into steaks. Keep seasonings light so they don't overwhelm the flavor. Lemon always goes with fish. Salt and pepper. Sear the steaks in a hot pan, stick under broiler or poach the whole fish in court bouillon. If you like it, go back and get another one.

    Not Cod - Hake gets my vote too.  I was thinking Pollack, but haven't seen a whole one in so long I forget what the head and skin look like.

    Either way it's an ocean fish so if you fillet/skin it you can poach, or dust/dredge/dust and fry after portioning.  Make sure you pat the cuts dry before doin' the do. Oh and do add some bacon drippins' to the fry fat.

    Pacific trout.... Corvina.
    Common catch 4-6 lbs.
    This per the fisherman that I sleep with...... the CCA and Texas Parks and Wildlife attempted to cross with the spotted sea trout (specs) a few years back to increase size and hardiness.
    No luck.
    How did it taste?
