    NEVER under cook proteins for personal chef clients, period! For that matter, it is generally NOT a best practice to under cook ANYTHING.

    I'm not sure where you are getting your information, but if this is a result, you are getting erroneous information!

    Follow the Food Code, not someone's advice!
