Pepper Ring Egg

    Oddly enough I've never done one of these before.  Turned out tasty, just a bit of leakage there on that one side.  What you can't see is that under the egg was some diced onion, jalapeno and garlic.  A pretty tasty experiment.

    I did another for my wife, who hates runny yolks, that was basically a cheese and mushroom omelet.  She loved it.  I may have to add such a presentation to my sunday brunch arsenal.

    cool stuff... did you blanche the pepper ring first? or did it cook through enough on it's own?

    basted eggs in a pepper ring...

    That looks really good. Add some baby spinach and I'm all over that-make me two!

    That looks tasty, next time I have some peppers to use up I will try it. Maybe some fine chopped diced and fried off bacon under it too.

    Cute idea!  I'd definitely want RUNNY yolk and totally cooked white.  Might get a little "color" on the pepper ring before putting egg inside.  Thinking could be a thicker slice and would hold 2 eggs.

    *shrugs* stuffed breakfast pepper, you put it ALL under the egg....

    lightly saute'd onions, ham, bacon, mushrooms, spinach, potato shards.

    'Cept the cheese--that goes on top with a quick broil.

    Apparently eggs in a frame (or whatever theyre calling it these days)

    are making a big comeback now, I used to make em as a kid.

    Dang Denny's is selling em as "Hobbit Holes". /img/vbsmilies/smilies/rolleyes.gif

    Actually I put the veggies and the ring in the pan, cooked for bit, maybe 3 - 4 minutes, stirring the stuff and flipping the ring over.  Then assembled the package and poured in the egg.
