Oddly enough I've never done one of these before. Turned out tasty, just a bit of leakage there on that one side. What you can't see is that under the egg was some diced onion, jalapeno and garlic. A pretty tasty experiment. I did another for my wife, who hates runny yolks, that was basically a cheese and mushroom omelet. She loved it. I may have to add such a presentation to my sunday brunch arsenal. mjb.
