I just purchased a bar/pub and the flat grill has started to crack and peel right in the middle. Its the size of a softball. I havent even turned it on yet, opening next month. Can this be repaired? Any advice will be very much appreciated! Thanks a bunch!!

I have no idea what it is you're describing.

Without pictures, I'm voting on ordering another grill TODAY.

Every flat top griddle I've seen including my own (Southbend) has been made of heavy duty steel plate.  Are you describing a built up patina that might be letting go of the steel face?  Build up occurs when the top is not cleaned daily and it builds up fast.  If this is the case you will have to scrape it back to the steel.

That makes sense & I would consider it common sense.  I just assumed they were starting with clean equipment.  I assume too much!
