paper towels vs kitchen rags

    hi, need advice on which is better to use for cleaning of table tops around the kitchen? kitchen rags are more economical because they can be rewashed however, they are very prone to bacteria growth that can cause food born illnesses . paper towels may reduce the risk of food born illness however they are much more expensive. What do your establishments use?

    Side towels CAN be bacteria free, use two, one to "clean", the second to sanitize.

    Even if you use paper towels to clean, you need to sanitize as well.

    For hand washing, paper makes sense.

    Always paper towels, or as we call it, blue roll.

    Keep a small sani- plastic bucket in kitchen with 05 parts per m. hhpochloride solution. Keep towl in it for cleaning

    Our health inspector (Tulare County, California) specifically requested that there be two (2) buckets, one with soap for cleaning, the other with either bleach or quat for sanitizing. They even make color-coded buckets, https://www.daydots.com/article.asp?HKEY=002&strPRODH=005005#005005 , for detergent and sanitizer.

    She actually preferred us to use disposable cleaning towels/cloths as well as disposable sanitizing wipes. That approach CAN get expensive.

    Pete  There is a disposable handi wipe that is impregnated with a steri solution that becomes active when it hits H2O. Pricey though. In Florida and NY we can't use soap as it leaves film or residue we can use man made detergent. We do not due what inspector prefers, we do what stated law says. Otherwise they drive you crazy as each one has different likes and dislikes.
