Palmiers uncurling

I finally figured out why some did and some didn't - silicon baking sheets.

They stay nicely curled on parchment but I guess the silicon doesn't have enough grip to keep them from uncurling as the layers spread.

Just sharing.

You are most likely correct.
Parchment absorbs a small amt of the moisture and fat released in the baking process.
Whatever is being baked will become crisper sooner and retain the shape better.
As always rpooley rpooley I will gladly dispose of all of your rejects lol.
Think of it as hurricane relief and therefore a tax deductible expense!
