Paleo diet in commercial cookery

    Just signed up so i'm a first time poster;
    22 years old, third year apprentice in Australia but i've been in the industry for about 5 years. Worked in a few cafe's and a couple of pubs and did a couple of months experience in a fine dining restaurant.. Ive taken a lot of influences from south east asian cuisine, as well as learning standard european foods in TAFE.  I've done a few home and gym catering events but I dont feel that catering is really my style

      I enjoy my fitness and nutrition as well as cooking, and my question is do any of you have experience with the paleo diet, or seen it in use in a commercial way much like you have kocher, diabetic or halal diets?  I haven't seen anything in Australia myself and I figured there should be a wealth of knowledge here and someone may help me out
