Onions - help needed

    Hi, was wondering whether anyone can help me.
    I own a catering company and we specialise in hot dogs. I want to marinate me onions in something to make them taste really special. Can anyone help? I have an event tomorrow so need something fast!

    what about a quick pickling with an Asian flare?

    take a basic namasu recipe, but use only onions

    <edit-I use loads of fresh diced ginger root for zip>

    Quick pickled red onions are addictive:

    Blanch a large sliced red onion in boiling water for 30 seconds then shock in cold water

    crush together cumin seeds, black peppercorns and kosher salt--a generous 3/4 teaspoon of each seed and 1/4-1/2  teasp of the salt

    Slice a couple of cloves of garlic in quarters

    Toss all together with 1/3 - 1/2 cup apple cider vinegar then add enough water to cover.

    Let sit at room temperature, stirring occasionally,  until the onions are bright pink

    These keep in the refrigerator for a long time.

    Great on fish or pork tacos but I'm betting they work work fabulously with hot dogs, too.

    This is based on a recipe from Rick Bayless's first cookbook

    Red onions. Slice in half longitudinally leaving skin on. Place in hotel pan, cut side down. Pour in equal amounts of red wine and balsamic vinegar to about 1/2" depth. Cover pan tightly and put in convection oven at 300 for 1 1/2 hours. Remove skins. Cut off core tops and bottoms. French cut onions thinly.

    You can marinate some of the onions with vinegar and mustard. We make a pickled slaw with mustard that goes great with hotdogs.

    Vinegar, mustard and a pinch of brown sugar for sweetness and to carmelize more..

    I was going to say balsamic vinegar and a touch of sugar - but the red wine suggestion above sounds awesome!
