How much are you asking for the Escoffier and is it the one with the 5000 or so recipes?

Escoffier Cookbook in the 60s and 70s was titled Le Guide Culinaire when it was printed in NY by Crown Publishing. After that it was different

Who to paypal to?  I want the book.

Prepared a Beef Wellington in the mid/late 70's using the black labeled book with pastry flour and a salted stick of butter.

No.  That's not trust, that's you distrusting him while asking him to trust you.  Trust would have each of you performing your part of the bargain based on the word of the other person.

To not trust that kokopuffs would perform timely and without fail is to miss the character of the man.
