Haven't worked in NYC but I've managed and consulted in union food services. Hated it, but managing is different than being an employee. Unions aren't there to make the manager's job easier.
From talking to friends, employees, and my wife in unions, it seems to me the experience can be summed up like this. A union shop is a GREAT place for bad employees, a GOOD place for average employees, a OKAY place for good employees, a FRUSTRATING place for great employees, and an IMPOSSIBLE place for managers.
