No time for a real cooking class.

    Hello Chefs,

    I have received so much input from great chefs on ChefTalk. I am now a sous chef/kitchen manager. This position is a demanding responsibility.  I work for a large concert venue located in Alexandria, Va. We sometimes serve up to 500 customers in an evening. My executive chef is an old school chef with tremendous knowledge graduating from CIA. He does his best to teach me. I started my career in the kitchen 2001. My first position was washing dishes. I always worked to achieve higher goals. I wish i would of considered the culinary arts earlier in life. Wishing that I would of invested in culinary school. Having a financial obligation to my family. Attending a actual class would be very challenging. I refuse to let that stop me from gaining any knowledge. I surf the net, read, and watch cooking shows on televison. Sometimes atttempting to sleep at bedtime thinking of creating menu items. My question to the Chef Talk community is where is the best place or places to gain the knowledge that would include literature. videos, and even legit on line classes. I would go as far as asking where could a forty something possibly get grants to study. I have heard of You Tube and other sites, but sometimes it doesn't serve the purpose. Connecting with Chef Talk was a great tool and source. Any suggestions would be appreciated. To let you know how passionate i am about cooking. I informed my wife that if the Lord calls on me. I must be wearing a crisp white chef jacket , pressed black Dickies, and a chef beret. Happy cooking!!!!!
