I am looking to purchase a convection oven that can hold 5 full sized sheet pan for my catering company and not sure whether it is better to buy new or used.  I also am unsure of the BTU output to get.

New one comes with a warrantee old one is buyer beware unless you know of someone looking to sell one. The fan motor could be burned out  the thermostat could be bad insulation burned up etc.

Thanks for your feedback.  Any recommendation on new ovens that won't break the bank.  I'd like to spend less then $3,000, not sure if thats a realistic number or not.

I have always favored Blodget or Vulcan  or Southbend

You can get a basic Blodgett single convection oven for around $2800 new - PM me if you need a link as I do not want to spam your thread.

I would stick with Blodgett, Vulcan, and Southbend for convection ovens also
