Well this weekend we had a banquet canceled and I have an overabundance of cooked top round. What are some your favorite ways of using up your extra beefs? Something besides the stroganoff.

My favorite is Thai Beef Salad. Slice thinly, add a little minced garlic, touch of sugar, fish sauce, lime juice, cilantro and canola oil. Mix well and serve over julienne cucumbers and bibb lettuce with cilantro sprigs.

    Ditto

Probably one of the best ways to deal with it. I would also use fine strips in a stir fry, just add the beef at the last minute.

I would use it to make pepper steak.

How about slicing it thin, and using for sandwiches and beef dips. you can freeze any other left overs.

If you allready have the beef sliced just make a bread stuffing and run beef rolls for
a lunch special.French dips,Pot pie,or grind some up and make a stew if you have the crowd.Marnade some and make kebobs with fresh veggies or freeze a bulk of the beef for a later time.Use some in beef burgandy / tips with mushrooms over noodles or whatever.
There is so much to do with beef and I'm at a loss for ideas.Sorry,Bill

so,,,you have beef coming out of the ying yang. Lets go:

    thai red beef curry.
    beef rendang.
perhaps a cajun roasted beef salad.
stir fry of beef with hor fan noodles with bean sprouts.
    beef satay.
    carbonnade of beef.
braised beef with a red wine and thyme reduction.
chargrilled steaks with red onion and chilli jam.
a salad of rare roasted beef, marinated vegetables, arugula with a red wine, thyme infused oil and seeded mustard dressing.
Replace the veal shanks with diced beef in a version of "osso bucco"
    Beef tagine.
Stir fry of beef, bok choy, egg noodle with a honey, garlic and soy sauce.

possibilities are endless - just use ones imagination and go relatively crazy.
