Can I use the first cup you take off sourdough for bread?
How so the 1st cup?
It depends whether your sourdough is active enough.
It should have doubled within 8 hours preferably and be full of bubbles, a fairly loose bubbly batter.
If not, then don't use but keep splitting and feeding.
I feed by tripling.
So take 5 oz sourdough, add to that same weight water and flour and keep repeating.
You can do pancakes with the not so active sourdough because you add baking soda to that which causes reaction by developing gas.
Just an example. No need to throw out huge batches.
Use a fairly high protein type flour with 13% protein approx. to feed.
