    How does a trend start? someone makes a suggestion, someone else gets hold of it and thinks its a good idea. The rest think they are missing out on something and there it is a TREND.

    So lets start some genuine trends, lets make them good ones, and then lets spread the word. Welcome to the "Chefs Talk Trend Think Tank" or the CTTTT or C4Ts or CT3Ts  

    Heres the first one. It has become trendy in many Chinese Restaurant to use the Stalks from spinach leaves in stir fries, they add a strong crispy flavour, but must be added just before service.
