Nero di seppia recipie

Hi guys,

Do any of you have a good nero di seppia recipe? My problem is that I have seen many versions and cant figure out which is the original recipe.

1) Tomato sauce base

2) Oil Base

3) Prawn Bisque/Fish Stock base

I made spaghetti al nero di sepia once, and I use olive oil, garlic, and white wine as the base.

- Put some olive oil

- Add garlic slices

- Heat it up until the garlic almost browned and you can small the aroma

- Put squid / cuttlefish pieces, fry

- Add white wine, reduce it

- Season with salt and pepper

- Put in the spaghetti

- Add the squid ink

- Garnish with parsley and cherry tomato

Oh, I used that black spaghetti as well :)

Did you use pasta made that had squid ink already added to it during the manufacture?
