Please how do I roast Ox Heart as I have bought a large 31/2 Lb one and have never roasted one before ?

David, Ox heart is much tougher than lambs heart and is better highly seasoned and braised. Remove as much sinew as possible and the slowly braise it down. Roasting will yield a very tough offal

Welcome, David!

If you are in the U.S. and near a good bookstore, go and get a copy of The Whole Beast: Nose to Tail Eating by Fergus Henderson. IIRC, it has a lovely recipe for heart -- although it might be for lamb hearts -- along with other odd bits.

I believe David is in the UK, but I found the book on Amazon . I expect they would have it at Amazon.uk as well. At least I hope so! :bounce:
